Artichokes and Peppers
This recipe is probably one of the easiest and yummiest recipe. The way that I cook the vegetables brings out the most flavor in them. It can be used as a side dish or as a main course, although there is little protein included here, and you ALWAYS want to have a protein source somewhere in your meals. If you enjoy chickpeas, you could easily add along with the vegetables those for added protein.
2 Tablespoon olive oil
2 cloves garlic, minced
1 small onion, chopped
1 can artichoke hearts, drained
1 jar roasted red peppers, drained
salt
pepper
1. In a medium pan, heat the oil. Add the onion and garlic. Sautee for about 2 minutes.
2. Add the artichokes and peppers to the pan and sautee for about 6 more minutes, until vegetables are soft.
3. Season with salt and pepper.
