The Key
It is hard to be gluten and dairy free. I struggle with it myself. It is way easier to be just gluten free or just dairy free because you can eat the other...but being both literally is the worst. The key to being and staying gluten and dairy free is to make yummy food..and I promise you will never miss eating gluten and dairy. If you make good and delicious gluten and dairy free food, I can promise you, you won't miss the cheese or the bread in anything. You just have to stay committed for your health and make that good food!
Artichokes and Peppers
This recipe is probably one of the easiest and yummiest recipe. The way that I cook the vegetables brings out the most flavor in them. It can be used as a side dish or as a main course, although there is little protein included here, and you ALWAYS want to have a protein source somewhere in your meals. If you enjoy chickpeas, you could easily add along with the vegetables those for added protein.
2 Tablespoon olive oil
2 cloves garlic, minced
1 small onion, chopped
1 can artichoke hearts, drained
1 jar roasted red peppers, drained
salt
pepper
1. In a medium pan, heat the oil. Add the onion and garlic. Sautee for about 2 minutes.
2. Add the artichokes and peppers to the pan and sautee for about 6 more minutes, until vegetables are soft.
3. Season with salt and pepper.
