Granola!


Granola is always a good additive to anything, from in a bowl as cereal to ice cream topping! This granola is of course gluten free and naturally dairy free. I used gluten free oats as the base of this granola, but of course if you don't avoid gluten, you could very easily use just regular quick cooking oats.


3 cups gluten free oats
1/2 cup sliced almonds
1/2 cup shredded coconut
1/4 cup whole flax seed
1/4 cup oil-based butter, melted
1/2 cup honey
1 teaspoon cinnamon
Zest from one orange

DIRECTIONS

1. Preheat oven to 350 degrees F. Spray 2 cookie sheets with non-stick cooking spray.

2. In medium bowl, combine all ingredients and stir until combined well.

3. Spread granola evenly on baking sheets in one layer.

5. Bake in preheated oven for about 20 minutes or until lightly browned and crispy, stirring every 5 or so minutes. Cool granola and store in airtight container!

If you like raisins or other dried fruit, you can certainly add about 1/2 cup dried fruit in after the granola cools!
