Lime Drop Cookies
















I love anything citrus. In my opinion, citrus makes everything taste better..and not just in desserts...in salads and main courses too! It's wonderful. With these cookies, you could very easily substitute lemons or oranges in place of limes. All those would taste amazing!


1/2 cup oil-based butter
1/2 cup sugar
1 egg
zest of 2 limes (if you are going to use orange, just use the zest of one orange)
2 Tablespoon lime juice
1 Tablespoon vanilla extract
1 teaspoon baking powder
3/4 cup almond meal/flour
3/4 cup rice flour
1/4 teaspoon salt

1. Preheat oven to 350 degrees F. Grease cookie sheet.

2. Cream butter and sugar in medium bowl until light and fluffy. Ad the egg and continue to beat. Once incorporated, add lime juice, lime zest, and vanilla. Continue to beat until fluffy.

3. Combine flour, baking powder and salt in separate bowl. Add flour mixture to butter mixture and combine until smooth.

3. Drop cookies using a teaspoon (I use a small ice cream scoop) onto greased cookie sheet about 2 inches apart. Bake cookies for about 8 minutes until golden brown!
