Spaghetti Sauce



I've been craving a good meat sauce for a couple days. I finally decided to put it to the test and create a hearty meat sauce for pasta. Of course I used a gluten free pasta ( I prefer this Quinoa pasta..so yummy..you can barely tell the difference from regular pasta and it is higher in fiber!). Just because you have to eat gluten free, doesn't mean you have to throw pasta out the window! I think this sauce is yummy! I would use ground turkey because it is much leaner!
 
1 pound ground turkey or very lean ground beef
8 oz mushrooms, sliced
1 yellow bell pepper, chopped
1 onion, chopped
2 cloves of garlic, minced
2 Tablespoon olive oil
7 large tomatoes, chopped
1 28 oz can crushed tomatoes
1 6 oz can of tomato paste
1 Tablespoon cut fresh or dry basil
1 Tablespoon cut fresh or dry oregano
1 T sugar
1 Bay leaf
1 teaspoon salt




1. Heat olive oil in large pot. Sautee garlic, onion, yellow bell pepper, and mushroom. Cook until mushrooms are soft, about 8 minutes.

2. Once vegetables are tender, add ground turkey or ground beef until browned. Once meat is brown, at chopped tomatoes, crushed tomatoes, and tomato paste. Mix in basil, oregano, sugar, bay leaf, and salt.

3. Simmer sauce for about an hour and a half, stirring occasionally.

4. Season to taste if necessary. Serve immediately! (Remember to take out the bay leaf!)
