Tomatoes and Basil




One of the best gluten and dairy free foods you can eat are vegetables! They are naturally gluten and dairy free. How much better can it get than that? But then again I am a nutrition dork and I do love my veggies. I also love tomatoes and basil together. It has two of the best flavors in the world all in one dish. So here is a simple way to prepare tomatoes.

2 cups of grape tomatoes
4 gloves of garlic
1 Tablespoon olive oil
5 leaves of fresh basil
Salt


DIRECTIONS

 1. Heat olive oil in medium pan over low medium heat. Chop up garlic and add to pan. Let garlic sautee for about 2 minutes.

2. Add the tomatoes and cover with lid for about 5 minutes until tomatoes have popped. Season with salt.

3. Right before serving cut basil into strips and sprinkle over tomatoes.
